Home Cooked: Salmon Tom Yum

Holy week is usually a good opportunity for Hubby to cook up one of his creations. This year i decided i would cook with him as he made my requested Tom yum soup

Well not really…actually i just hung around reading Gladwell’s 2007 New Yorker article on Enron and goofing off with Ato and Kobe while Hubby made the most delicious homemade Tom yum i’ve ever tasted.

I was so impressed that i thought i would share the recipe

1. Prepare the salmon strips by cutting the fins, adding salt and pepper and searing

2. Saute garlic, ginger and onions then add the tomatoes and coconut milk

3. Add the tom yum paste and simmer then drop in the lemongrass

4. Add the seared salmon strips to the concoction

5. Allow to simmer

6. Garnish with cilantro and serve

It was definitely one delicious bowl of tom yum!

We got these on our trip up to Kilometer 60 and even if it was a splurge it was well worth it! So good!
