Home Cooked: Fluffy Scrambled Eggs
I got an e-mail inviting us to try out Lady’s Choice version of fluffy scrambled eggs. They must have known how much i love egg dishes…
We’ve always been on the look out for ways to make the fluffiest scrambled eggs. We’ve tried adding milk, beating the eggs to death…we even almost tried applying our espresso maker’s steamer (we saw it on tv) but decided against it lest we make a mess…so when we got this package from Lady’s Choice, Hubby and i couldn’t wait to try their fluffy scrambled eggs’ recipe
As soon as we had time, we decided to make the dish by following the 3 simple steps they sent us
1. Beat 4 eggs until frothy. You can add salt and pepper to taste.
2. Mix the eggs with 2 tablespoons of Lady’s Choice Mayonnaise (we softened the mayonnaise in another bowl before we did this)
3. Cook the mixture in a hot non stick pan (we decided not to use any oil) making sure to continually stir and not to overcook the scrambled eggs.
It’s the simplest thing!
We ended up with the softest, fluffiest scrambled eggs we’ve ever tasted!
Now of course, hubby was responsible for cooking the eggs.
As he was whipping up the main attraction of our breakfast, he asked me to heat up our bagels.
I was actually excited with my task because i was going to use the technique i learned recently on how to perfectly heat up frozen bagels…
Unfortunately, i forgot to regulate the heat of the oven and ended up with a scorched bagel! Bummer!
Now you know why hubby never leaves me in the kitchen alone…
Luckily, it was salvageable
Hubby decided he would have the fluffy scrambled eggs on the bagel
while i had mine on the side of my cream cheese slathered scorched bagel
It was so delicious! This technique is actually the best we’ve used so far to produce the fluffy scrambled eggs we’ve been looking for. (Serves 2)
Next time, we’re going to try this with cheese…makes me drool just thinking about it!

I love eggs more than anything (alright, eggs AND spam). Growing up, if there wasn’t anything on the dinner table that I liked, our househelp would always remedy the situation by serving up an egg dish. Omelets, tortas, or just plain fried eggs (where the whites are fried crispy but with a runny yolk) already makes me happy.
I love the creaminess you get by mixing eggs with mayonaise. Done right, it is a cloud of heavenly goodness. I should have this for breakfast!
