Good Friday Dish

For the 2nd year in a row i’ve been going through this on line retreat of the Philippine Jesuits for holy week. Its a 45 minute retreat for 3 days which is so convenient for busy people like me. I remember finding out about this retreat after the holy week last year and although Easter had already arrived, i decided i would go ahead and try it out. I was so satisfied that i vowed to do the retreat yearly. Much like last year, i finished the retreat feeling refreshed and enlightened!

Philippine Jesuit’s on line retreat

In the spirit of the Good Friday, hubby cooked clam omelet as one of the dishes for lunch. It was delicious and really easy to make.

Clam Omelet


Ingredients:
Clams, steamed and removed from the shell
3 Eggs, beaten
3 small Tomatoes, chopped
1 small Onion, chopped
2 tablespoons Butter
1 tablespoon Soy Sauce

Directions:
1. Melt the butter in a heated pan
2. Saute the tomatoes and onions in the melted butter

3. Add the clams and season with soy sauce
4. Pour the beaten eggs into the mixture and fold

Whalah! *smirk* Delicious Clam Omelette made by hubby
